Lobster & Seafood Salad

A delicious and healthy lobster and seafood salad served on cos lettuce.

 



Serves: 4

Ingredients:

2 western rocklobsters raw and shelled
500gm wa mussels
200 gm wa fish fillet pieces
8 wa scallops
200gm north west squid cleaned and cut into rings
12 king or tiger prawns raw and peeled
Sumich extra virgin olive oil
Western salt to taste
Pepper to taste
Cos lettuce to serve

Poaching Liquor
3 ltrs water
50ml white wine vinegar
50gm western salt
Rind of 1 lemon
Juice of 1 lemon
1 carrot
1 leek
3 stalks of celery
4-5 peppercorns
Sumich olive oil


Method:

  1. Put all ingredients in a pot, except olive oil, bring to the boil and simmer
  2. Once seafood is cleaned and prepared poach seafood in liquor separately
  3. As you pull seafood out of liquor drizzle with sumich olive oil and coo

To prepare the mussels:

  1. Heat post and add 2 tablespoons of sumich olive oil
  2. Add mussels and cook for 4-5 minutes with lid on
  3. Remove any mussels that do not open

Cooking times:
Lobster... 4-5 minutes
Fish and prawns... 2-3 minutes
Scallops and squid... 2 minutes

Serving Instructions:

Once seafood has cooled mix fish, scallops, squid and mussels in a bowl with lemon rind and Sumich extra virgin olive oil. Serve with lobster on baby cos lettuce. Season with salt and pepper.
